Beer Bread

Alya’s mom’s bread recipe (for the bread machine):

  • 3 cups bread flour
  • 1 tsp salt
  • 7 oz water
  • 3 oz beer
  • 1 Tbsp vinegar
  • 1/4 tsp yeast

Mix the dough – you can let the bread machine do it on “bake rapid”. Set the timer for 11-13 hours, basic bake setting.

Possible modification:

  • substitute 1 cup to 1 1/2 cups of the flour with spelt or whole wheat

Recent experiment:

  • no vinegar
  • 1/3 cup sourdough starter
  • added 1 Tbsp flour
