Broccoli Fritters

  • 8 ounces (1 small-to-medium bundle, 225 grams) fresh broccoli (3 cups chopped)
  • 1 large egg
  • 1/2 cup (65 grams) all-purpose flour (or spelt)
  • 1/3 cup (30 grams) finely grated parmesan cheese
  • 2-3 cloves garlic, minced
  • chopped parsley to taste
  • chopped dill to taste
  • 1/2 teaspoon Kosher salt, plus more to taste
  • A pinch of red pepper flakes or several grinds of black pepper
  • Olive or vegetable oil for frying

Serve with a fresh salsa of chopped tomatoes, sweet onion, lemon juice and a bit of salt.

  • 1 cup (90 grams) finely grated parmesan cheese
  • 6-9 cloves garlic, minced
  • 1/3 lemon
  • 1/2 onion
  • chopped parsley to taste
  • chopped dill to taste
  • 3/2 teaspoon Kosher salt, plus more to taste
  • A pinch of red pepper flakes or several grinds of black pepper
  • Olive or vegetable oil for frying

served with 1 cup wild rice.
