Broccoli Fritters
- 8 ounces (1 small-to-medium bundle, 225 grams) fresh broccoli (3 cups chopped)
- 1 large egg
- 1/2 cup (65 grams) all-purpose flour (or spelt)
- 1/3 cup (30 grams) finely grated parmesan cheese
- 2-3 cloves garlic, minced
- chopped parsley to taste
- chopped dill to taste
- 1/2 teaspoon Kosher salt, plus more to taste
- A pinch of red pepper flakes or several grinds of black pepper
- Olive or vegetable oil for frying
Serve with a fresh salsa of chopped tomatoes, sweet onion, lemon juice and a bit of salt.

- 6-9 cloves garlic, minced
- 1/3 lemon
- 1/2 onion
- chopped parsley to taste
- chopped dill to taste
- 3/2 teaspoon Kosher salt, plus more to taste
- A pinch of red pepper flakes or several grinds of black pepper
- Olive or vegetable oil for frying
served with 1 cup wild rice.
