Lemon Ricotta Matzo Brei
- 4 matzos
- milk (enough to cover the matzos)
- 4 eggs
- 1 tsp vanilla
- 1 Tbs sugar
- zest of 1 Meyer lemon (I assume regular lemon is fine too, but we happened to have Meyer.)
- 1/2 C ricotta cheese
- butter for frying
Serve with lots of lemon juice and with powdered sugar. Yum!
