Lemon Ricotta Matzo Brei

source recipe

  • 4 matzos
  • milk (enough to cover the matzos)
  • 4 eggs
  • 1 tsp vanilla
  • 1 Tbs sugar
  • zest of 1 Meyer lemon (I assume regular lemon is fine too, but we happened to have Meyer.)
  • 1/2 C ricotta cheese
  • butter for frying

Serve with lots of lemon juice and with powdered sugar. Yum!
