- 4 matzos
- orange juice (enough to cover the matzos)
- raisins (a handful or so)
- 4 eggs
- 1/2 tsp cinnamon
- 1/8 tsp cloves
- 1/2 C ricotta cheese
- butter for frying
- Put the raisins and juice in a pot, and bring to a boil. Let it boil down a bit.
- Pour juice over broken matza, and squish it down with a lid.
- Proceed as in the original recipe.
Serve with lots of lemon juice. The texture isn’t quite as nice as the Lemon Ricotta Matzo Brei, but the orange flavor is nice.
