Quick Fresh Tomato Sauce
This is very similar to Spinach & Tomatoes.
- pasta
- olive oil (for sauteing)
- garlic, minced
- cherry tomatoes, cut into 2-3 pieces
- leafy greens (e.g. spinach, collards, kale, etc.), stemmed and chopped
- Better than Bouillon chicken base, ideally low-sodium
- herb of choice (e.g. thyme), dry or minced fresh
- ground turkey, chicken or beef (optional)
- salt and pepper to taste
- feta cheese, crumbled
- Put on water for pasta, and put in the pasta once water boils.
- Brown ground meat if using and set aside.
- On a medium-large frying pan, briefly saute garlic on medium heat until aromatic, about 30 seconds.
- Add cherry tomatoes and leafy greens and saute until greens are wilted and tomatoes are soft.
- Make broth by dissolving chicken base in some water (say, half a cup). You can make the broth fairly concentrated, especially if using the low sodium version.
- Add broth, herbs, pepper, and cooked meat to the tomatoes and leafy greens. Cook until the liquid is mostly gone. Add salt if needed (it may not be).
- Serve over cooked pasta and top with feta.
