Ingredients
- 1/2 cup chopped walnuts
- 1/2 medium green cabbage
- 2 nectarines
- 2 Tbsp feta
- 2 tsp pomegranate extract
Recipe
- Dry-roast the walnut pieces on medium heat. You can work on the rest
of the recipe while they cook, but keep a close eye, to avoid burning
them.
- Chop up the cabbage and nectarines into small pieces, and toss into
a medium-sized bowl.
- Crumble in the feta, and top with pomegranate extract and roasted
walnuts. Mix, and enjoy!
Substitutions
- Peaches instead of nectaries are fine, of course. You could also try
strawberries or plums.
- You could use pecans instead of walnuts.
- If you don’t have pomegranate extract, you could try some other
sweet & sour dressing. A splash of cider vinegar or red wine vinegar
+ honey or maple syrup could work (mix with a bit of hot water if it’s
too thick and sticky).
