Cabbage & Peach Salad

Ingredients

  • 1/2 cup chopped walnuts
  • 1/2 medium green cabbage
  • 2 nectarines
  • 2 Tbsp feta
  • 2 tsp pomegranate extract

Recipe

  1. Dry-roast the walnut pieces on medium heat. You can work on the rest of the recipe while they cook, but keep a close eye, to avoid burning them.
  2. Chop up the cabbage and nectarines into small pieces, and toss into a medium-sized bowl.
  3. Crumble in the feta, and top with pomegranate extract and roasted walnuts. Mix, and enjoy!

Substitutions

  • Peaches instead of nectaries are fine, of course. You could also try strawberries or plums.
  • You could use pecans instead of walnuts.
  • If you don’t have pomegranate extract, you could try some other sweet & sour dressing. A splash of cider vinegar or red wine vinegar + honey or maple syrup could work (mix with a bit of hot water if it’s too thick and sticky).
