Котлеты/Kotlety (Fried Meat Patties)

This is a very standard Russian dish.

  • 2 lbs ground beef, turkey, chicken or even fish
  • 2 eggs
  • 5 slices of bread, soaked in water and then squeezed
  • 1 medium-large onion
  • 1 tsp salt
  • pepper (to taste)
  • bread crumbs (if using beef)

Mix up the eggs with a fork, food process the bread and onion, then combine everything. Form into patties and fry. For beef kotlety, roll in bread crumbs before frying. Interesting note: turkey kotlety taste a lot more similar to beef than to chicken.

Works well served with mashed potatoes and some broccoli or salad.
