Salmon with crispy skin
When cooking salmon, we often prepare the skin as a crispy side dish as follows:
- Sear salmon on high heat, skin-side down, for 1 minute or less
- Remove salmon from heat. Peel off skin (it should come right off) and proceed with cooking the salmon however you like
- Cut salmon skin into small pieces (e.g. 0.5”x1” rectangles)
- fry salmon skin pieces with salt on medium heat until crispy – it’ll crackle nicely sorta like bacon
- serve
